Heidehonig
Heidehonig, pressed heather honey from the Lüneburger Heide, harvested by the Imkerei Langenacker apiary in Marklendorf: intense in flavour, with a spicy note and a jelly-like consistency. Because it cannot be spun out of the comb, the beekeeper cuts the combs into pieces and presses them.
What sets this product apart
Heather honey comes late in the year: only as the bee season draws to a close do the heather flowers open. Managing the colonies is correspondingly demanding, and some years there is no harvest at all. The honey itself is jelly-like, and fine crystals are typical of the variety. The beekeeper pots it in jars with metal lids that can be reused, for preserving, say.
The Imkerei Langenacker in Marklendorf came into being five years ago: the founder often helped a beekeeper friend, eventually wanted bees of his own and took over an elderly gentleman's equipment, colonies included. Today everything at the apiary is done by hand, with wooden hives made of local timber, some of them home-built, and no plastic at all. The colonies stay at their sites all year round; only for the heather honey do they travel 30 minutes.
Full of character in flavour, crystals noticeable, a fine ambassador for the region.
